Four percent fewer eggs were laid in Saxony last year. As the State Statistical Office announced on Maundy Thursday, production in the 56 laying hen farms with at least 3,000 places fell to around 892 million. In the organic sector, production fell by nine percent to 47.8 million. This was a good five percent of total production. 85 percent of eggs came from barn hens and 9 percent from free-range hens.

The average hen in Saxony laid 302 eggs, 7 fewer than in the previous year. This is above the national average of 297 eggs. While laying hens from barn hens laid around 305 eggs a year, those from organic hens laid around 281. Around 13.1 billion eggs were laid nationwide. With a share of just under seven percent, Saxony was the fifth largest egg producer after Lower Saxony, North Rhine-Westphalia, Bavaria and Brandenburg.
