Saxony continues to produce the most goslings in Germany. As the State Statistical Office in Kamenz announced just in time for St. Martin's Day this Tuesday, around 44 percent of all goslings in Germany hatched in the state this year.
Four of Saxony's seven poultry hatcheries are dedicated to reproducing geese. In 2025, around 628,000 goose eggs were laid in the incubators, from which 390,900 goslings - the goslings of the goose - hatched, it was reported. Compared to 2024, this was 700 goslings (0.2 percent) more.
The main goose slaughter season begins on St. Martin's Day with the so-called St. Martin's geese. In Germany, geese are mainly served at Christmas. The goose is stuffed with apples and onions, cooked in the oven and usually served with red cabbage, dumplings and gravy.
