"It just depends very much on the price of the special poultry," explained Klein. In many cases, the cheaper alternative of duck breast will also be found on the menus.

VAT reduction does not mean lower prices

In addition, the Saxon gastronomy industry is longing for the VAT reduction promised by the federal government in January 2026. "It's high time for the reduction to come," said Klein. However, this would not automatically reduce the prices on menus. This is due to increased raw material prices, and the minimum wage will also rise to 13.90 euros per hour on January 1.

"Some businesses will pass the reduction on to customers, if only to boost business again," explained Klein. Others will keep prices stable and invest in the business. Ultimately, however, each business will decide for itself how to set its prices.
