Saxony's restaurateurs are full of expectations for the Christmas season. Why roast goose could become more expensive and what role VAT plays.

Saxon restaurateurs are looking forward to the high-turnover Christmas season. "This is the most important business of the year. The businesses need this momentum," said the managing director of the German Hotel and Restaurant Association (Dehoga) in Saxony, Axel Klein, on request.

In the restaurants, the reservation figures have already risen significantly, Klein emphasized. The booking situation for companies that invite their employees to Christmas parties at the end of the year is also already excellent.

Roast duck as a cheaper alternative to goose

The price for the traditional roast goose with dumplings and red cabbage at Christmas time could well be higher than in previous years. "It just depends very much on the price of the special poultry," explained Klein. In many cases, the cheaper alternative of duck breast will also be found on the menus.

VAT reduction does not mean lower prices

In addition, the Saxon gastronomy industry is longing for the VAT reduction promised by the federal government in January 2026. "It's high time for the reduction to come," said Klein. However, this would not automatically reduce the prices on menus. This is due to increased raw material prices, and the minimum wage will also rise to 13.90 euros per hour on January 1.

"Some businesses will pass the reduction on to customers, if only to boost business again," explained Klein. Others will keep prices stable and invest in the business. Ultimately, however, each business will decide for itself how to set its prices.
